Can someone give me some easy dinner ideas for tonight? I am in no mood to cook for hours. TIA!

Turkey meatballs are out, a rotisseire chicken is out, ( I made this already this week) anything w/ yellow cheese - DH hates yellowish looking cheese unless I can sub in another cheese- mozzarella, swiss etc,
Last night was cold cut night- we had sandwiches, I am just not in the mood to cook too long, I hurt my shoulder at the gym so I do not want to fuss. I was thinking of making burgers mixed with the powder ranch dressing, not sure , did anyone ever make these- also how much powder do you put in, I looked in the back of the mix and it said 4 pounds chop meat to 1 envelope- too me that sounds liike a lot of chop meat? help I need suggestions! Thank you !!!

4 lbs. of chop meat IS a lot! I usually buy 1 lb or a little over, and figure on that making 4 burgers. So, if you're adding the ranch powder, I guess you'd only need about 1/4 of the packet. I've never made them that way though.

If you're looking for easy ideas using chop meat, what about chili? Can't get any easier than a one pot meal! Meatloaf is simple too.

Hope your arm feels better!

I am probably going to make raviolis and sauce for dinner.

Friday or Saturday nights I often make pizza.

I just buy the frozen or store-bought dough.

I'm making pita pizza. You can just buy a 5 pack of pita bread, put whatever you want on it & I bake them directly on the oven rack to make them a bit crispy.

I hardly have time to cook these days, with the two kids. I hate eating the same things all the time, so I had to find a way to make a variety of stuff in less time. Lately I have been marinating some chicken, throwing it on the BBQ and mix with pasta and veggies or serve with rice. I just throw things together most nights from whatever I can find.

Last night for dinner we had potato gnochi and chicken with spinach, asparagus, peas, sundried tomato, garlic and red onion in a garlic white wine sauuce. Sounds difficult but almost all the stuff came out of my freezer, even the grilled chicken was precooked. I put some white wine, chicken broth and a touch of EVOO in a pan with some Italian spices. Mixed it all together until defrosted garnished with a pinch of grated cheese and it ready to eat in under 15 minutes.

Some quick ideas for you.

Tacos - Fajitas
Pasta of some sort with maybe veggies or/and chicken. Either with sauce or garlic and oil.
Raviolis
BBQ - Burgers/hot dogs/veggie burgers/black bean burgers
Soup and Grilled Cheese
Salad with grilled chicken
Soup and salad

Put a little in- make a bite sized patti, cook it and see if you need to add more ranch.

It is on the back of the ranch mix- it must be a typo!On the website I got what you got- I ended up making this-but put in montery jack cheese instead of cheddar cheese. It is cooking right now and smells yummy. We are having it in whole wheat pita bread and I am having a baked spinach knish , DH is having those microwaved french fries in the box.I will report back later if it was good. It was so simple to make .
Thank you for all of the ideas!Chat Icon
