vegetable meatloaf??
i want to make a turkey meat loaf with veggies....i have zucchini (which I'm going to grate) spinach and mushrooms. has anyone made something similar to this before?? any suggestions before i just start experimenting???

DH does the cooking and he makes meatloaf with mushroom (chops them small) and just adds them to the meat with the seasoning and stuff. Once he flattens it out he puts brocolli and mozzarella cheese in the middle then folds it over to make the loaf. He's never used zucchini or spinach. But he does hide spinach in DS's meatballs so I imagine it would be similar to adding it to a meatloaf.

I always add chopped veggies to my turkey meatloaf. Usually whatever I have on hand.
I chop or grate them and add them into the mix when Im mixing my meat with egg, breadcrumbs, parm cheese, seasonings and a couple of dashes of worchestire (sp?) sauce. I think Zucchini would be good, but I feel like it lets out a lot of water, so not sure how that would work.

If you are going to use zucchini, grate it put it in a colander with some salt and let it stand for at least 30 mins. Then squeeze the grated zucchini to get the water out.

What is the purpose of this? I've never heard of this technique

I cook alot with zucchini. I make zucchini pancakes, zucchini pita and I don't want that extra moisture in my dish. So I do that salting/squeezing to get out all the water. (Plus its something my grandmother showed me). You don't need a lot of salt and be sure to adjust the salt amount in whatever recipe you are using.
