Party questions - chicken and pasta
I have 30 people coming tomorrow and I'm serving (among other things) chicken cutlets and pasta with sauces on the side - regular tomato and vodka sauce.
The cutlets are breaded but I haven't made the pasta yet.
It'll all get cooked and then put into sterno pans.
How do I keep them both from drying out in the meantime?
I was thinking add a little olive oil to the pasta so it doesn't clump. No idea about the chicken.

Cook the pasta a little shy of al tende. Tomorow, bring some water to a boil and finish it off for 2 minutes. It will taste like you just cooked it.

do everything but cook the pasta - pasta cooked in advance is gross .......

Thanks all. I ended up doing two different pans and just adding the sauces because I was worried about it clumping.
