Fiesta menu

Please tell me if you think this is enough food. When I initially placed the order it was for 20 people, And the caterer thought I would have leftovers, but now we're up to 25 and I'm wondering if I should up the order. The caterer thinks I will still have plenty.

Here is what I ordered:
1/2 tray of pulled/shredded chicken
1/2 tray of sliced steak
Those will come with corn tortillas and the fixings for tacos
24 crunchy quesadillas- mix of steak and chicken
20 empanadas
20 burritos
1/2 tray of plantains
1/2 tray of white rice
1/2 tray of black beans

Here is what my sister and I are making:
Frozen taquitos
Frozen jalapeño poppers
Chips and salsa and guacamole
Cheese dip
A big Cesar salad
Chili with all the fixings

I know not everyone will have one of every single thing or they may be rolled out of here. Lol. I don't want to have a lot of extra, but I definitely don't want to not have enough.

That sounds like a ton of food!

ETA: I know you didn't really ask for any critique on the menu, but I really don't think Caesar salad goes with the rest of the menu. Why don't you just do a more mexican fiesta type salad- romaine lettuce or mix of romaine and iceburg, with tomatoes maybe some guacamole pieces, tomatoes, shredded cheese, bell peppers, maybe some beans or corn, and top it with a cilantro lime dressing or something that will fit with the menu more?

Really? I feel like we always get table side Cesar salads when we eat Mexican. It is going to be a romaine based salad, I suppose I could do tomatoes and avocado slices. What kind of dressing would you suggest?

I think a more Mexican-flair salad would be great!

I'd do maybe a citrus vinaigrette or chipotle lime vinaigrette... something along those lines!

You can do crispy tortilla strips on top and even some radishes for crunch.

Sounds like a great party! Also, you probably have enough food since you have good apps.

How big are the empanadas? If they are small, I'd get more of them since people tend to eat a lot of them since they are an easy "finer" food. Unless you are serving them as part of the main meal, then you may be ok since you have the burritos.

I agree about the salad, Caesar is not a Mexican type salad. I think a light dressing with garlic, oil, lime (don't have recipe though) would be best, you want it to be refreshing especially if there is spicy food.

Just an opinion about the rice - I wouldn't go with white rice. Tex-Mex food isn't usually served with plain white rice. The rice should be more flavorful without being overpowering. Maybe a tomato-based rice with some chopped peppers (what restaurants call "Spanish rice.")

Nix the ceasar salad and make a nice, hearty avocado salad and would go with yellow rice.

I suggest a cilantro lime type dressing...

1/4 cup extra virgin olive oil
2 tbsp lime juice
1 jalapeno, minced
2 tbsp white vinegar
1/4 cup fresh cilantro, roughly chopped

I went and spoke to the owner of La Puebla and they're doing it for a great price and delivering! I told him to do the burritos on smaller wraps so they won't be so huge. I'll leave a knife in case people only want a half.

Perfect. These smaller places can usually work it out if they have enough notice. Smaller burritos are a good idea.

Just wanted to update you all in case anyone is inspired to do a Mexican party. There was WAY too much food. All of the empanadas were eaten, most of the quesadillas and burritos too. But there's is tons of chicken and steak left and a hatlad of rice and beans- they wound up bringing a full tray of rice and a ginormous vat of black beans. All of the food was delicious!!!
