Mexican Fiesta menu?
Need ideas!
So far I have:
Taco bar
Quesadillas
Yellow rice
Refried beans
Black beans
Nacho taco salad
Guacamole
Chips and salsa
Anything else???

my coworker gave me a recipe today for a mexican salad that she said was a hit at her parties...
you take iceberg lettuce, shredded cheddar cheese, red beans by goya, onion, tomato, put it in a bowl, then crunch up doritos and mix it up in the salad with good seasons italian dressing

That's similar to my Nacho Taco salad...Mine is iceberg lettuc mix, bell peppers, olives, onion, black beans, tomatoes, shreddred sharp cheddar, seasoned turkey taco meat, Dorito's and Italian dressing.

Only other things I can think of would be jalapeno poppers, queso and/or chili cheese dip. Yum, love everything you listed!!

I looove Mexican food (I was born on Cinqo de Mayo and consider it a MUST to have a fiesta every year!! )
I say go to www.rickbayless.com.
He just has the best collection of Mexican recipes and ideas ever. And he's a skinny middle aged white man.. go figure.

Rick Bayless is my chef boyfriend in my head. Nerdy and cute and wears glasses and cooks authentic Mexican. I just love him
