I am going to change your life with this crockpot recipe.
I made this last night. Words can't descibe it's awesomeness. This is a forever recipe.
Crockpot Roast Chicken
1 whole roaster chicken Whatever spices you like
Clean chicken and place in crockpot. You can add a layer of onions or veggies in the bottom, but I did not since I was in a rush. I made a nice spice mix of rosemary, parsley, salt, pepper, garlic, onion, some Tony's seasoning...I literally went in my spice cabinet and just used it all. I sprinkled it generously on the bird and in the cavity.
Put the lid on, set for 8 hours. Really, that's it.
Came home to the best roasted chicken I have ever had. Leftovers will be made into chicken salad and the drippings are now homemade stock. The only thing I might add to this is to drizzle some EVOO on the skin, just to lube up the spices.

No liquid at all? And it didn't dry out? Its sounds super easy and good though! I just thought I'd have to add some sort of liquid.

Nope, I was curious too but it literally fell apart and I've never had such tender chicken. I'm sure you could add a little to the bottom and it wouldn't hurt.

I've made whole chickens in the crock pot, and they do come out very tender and flavorful ... it's not like a roast chicken, because you don't have that crispiness. But it's still good and very versatile - more like a rotisserie chicken that you get from a deli or supermarket.
You definitely don't need to add any liquid... it doesn't dry out because with the lid on, all of the moisture stays in the crockpot. Foods that are cooked in a slow cooker give off a lot of liquid, which is why you need to reduce the amount of liquid you add to a recipe that is typically made in the oven or on the stove top when you are converting it to a slow cooker recipe.

I would throw it out anyway but just curious- how was the skin? It didn't crisp at all right?

The bottom didn't crisp, but the top did. I don't eat the skin, but I was pleasantly surprised at it's crispness.

This sounds awesome. I have always been skeptical about making a whole chicken in the crock pot but I'll absolutely try this. Do you think potatoes & carrots would be okay in it also or should I just leave them out?

I do plan to try it with veggies the next time, my only concern is that there is a bit of fat drippings so I don't know if the veggies will get super oily or not.

I've done this a few times and at first really questioned it "Can I really just plop in a whole chicken and have it come out yummy" and answer turned out yes!!! Best chicken ever, packed with flavor, and get a lot of use out of it because it literally falls to pieces.
Need to try w/ veggies. I've only added in carrots before to add flavor.

I have done this before.. then afterwards, use the chicken to make a stock- I do this all the time...
Throw the bones in- cover with water. Add a chopped onion, a chopped carrot, chopped celery, parsley and a bay leaf, salt & pepper. Cook on low 12 hours.
Strain and there you have it.

making this tonight...have my chicken on a bed of onions, celery & carrots. The house smells amazing and I have about 2 hours left of cooking..but I can already see how moist and delicious this is going to be! thanks!!

I read somewhere if you put a few balls of aluminum foil on the bottom, put the chicken on top, and the. Put the veggies in around the chicken, it won't get too oily. Haven't tried it yet, but I will next week.

I made this tonight. I Put onion, celery carrots, and 3 cloves of garlic with maybe 1/8 cup of chick broth. Put chicken on top. Cooked on high for 6 hrs. It was very good, falling off the bone. I did baste several times it to redistribute the liquids on top of the chicken

Thank you! Used the idea for this recipe today....but I used a piece of lamb instead of chicken. Delicious! I've never just thrown a piece of meat in with some spices...I've always added water. This changes everything!
