Brush my cast iron with olive oil, get it screaming hot and then sear it and cook it that way.

I like with a pepper crust a la au poivre style. I crush peppercorns and crust the outside of the steak with it. I then let the meat get to room temp.
Use a cast iron pan and add a tablespoon of butter and get it really hot. I then cook it to my preference. Depending on the cut of meat (I like those cowoys steaks, yum) I sear then throw in the oven.

I do the cast iron skillet or the grill pan. Never comes out as good as on a grill though. But we don't ahve a place to keep a grill, so we have to use the stove.

Pan sear the outside with smidge of EVOO and butter. Finish it off on broil in oven. It's delicious

We use a double burner cast iron grill pan. It's ridiculously heavy, but the food comes out pretty good. Nothing compares to grilling outside though.

Re: How do you cook steak when not on grill?
With a good piece of steak I don't need extra fat of oil or butter.
Leave the steak out for a bit to get to room temp. Rub s&p and a clove of garlic on all sides. Pan sear for a 1-2 min on each side.
Heat pan in the oven until hot (without steak on it). Then broil for a few min on each side. The thickness of the steak will determine how long and how far away from the broiler the steak should be.
The above is from the Joy of Cooking. I make lamb chops the same way. Delish!!

Re: How do you cook steak when not on grill?
I have such a 'block' with steaks not on grill. However, i served christmas dinner with filet mignon in a cast iron pan, first on top of stove then in the oven to broil. EXCELLENT! but, my mother led the show... lots of smoke in the house and stuff, but everyone LOVED them.
I need a cast iron pan, i guess!
