No-cook appetizers

Hoping you ladies can help me out.

My mom asked that I bring an appetizer to Thanksgiving dinner that does NOT require the use of her oven. My sister already said she's bringing a cheese & cracker platter.

Any suggestions on what I should do? I'm guessing my safest bet would be a cold dip of some sort? Anyone got a go-to dip they'd recommend?

Thanks!!!

You could do spinach dip with veggies, shrimp cocktail, a spiced nut mix, cream cheese topped with pepper jelly.

I agree with the previous suggestions -

Shrimp cocktail is so easy and always goes over big at parties. It's a substantial appetizer, but isn't too heavy.

If you want a twist on shrimp cocktail, I've also done cold marinated shrimp for parties... heat up some minced fresh garlic in olive oil to infuse the oil with the garlic flavor, then toss the garlic oil with cooked shrimp, lemon juice and zest, and chopped fresh parsley. Marinate in the fridge for a few hours (or even overnight) and serve chilled.

I make a lot of "from scratch" items when I entertain, but the most popular dip I make is always the spinach/vegetable dip made from the Knorr vegetable soup packet. So easy... just follow the directions on the packet (I add the optional scallions and water chestnuts). I serve it in a bread bowl (sourdough or pumpernickel) with the bread cubes, crackers, raw veggies, etc.

Another idea would be to make a cold antipasto platter of non-cheese items... things like gourmet/stuffed olives, marinated mushrooms. breadsticks wrapped in prosciutto or salami, maybe sliced pepperoni, roasted red peppers. Not sure if your family likes that type of stuff, but it would be good stuff to just pick on with a glass of wine.

You could also do marinated vegetable skewers --I saw one in a magazine that had a cherry tomato, olive, and mozzerella ball/bocconcini marinated in a vinaigratte. Or you could do the same idea but add in tortellini on the skewer.

Re: No-cook appetizers

I'm in charge of apps for Thursday and my MIL also does not want anything that goes in the oven. I'm making shrimp cocktail, caprese skewers, and a cold antipasto.

Crudite

Maybe pre-cook something before you get there so all you have to do is nuke it?

Spinach dip in a bread bowl with pieces of bread, veggies and pita chips.

Mozzarella balls, cherry tomatoes and fresh basil skewers.

Cold pasta salad - I love tortellini with mozzarella balls, sundried tomatoes, olive oil and seasoning (salt, pepper, basil, garlic).
