Here is the one I always make (not vegetarian, obviously, but always a crowd pleaser and relatively easy to make)
Sausage Stuffed Mushrooms
3 hot or sweet italian sausages, casings removed 1.5 tsps dried oregano 1 cup of freshly grated parmesan cheese (about 3 oz) 1/2 tsp. worcestershire sauce 1/2 tsp. garlic powder 1 8 oz package of cream cheese, at room temperature 1 large egg yolk
olive oil 24 large (about 2 inch diameter) mushrooms, stemmed 1/3 cup dry white wine
1) Saute sausage and oregano in heavy large skillet over medium-high heat until sausage is cooked through and brown, breaking into small pieces with the back of fork, about 7 minutes. Using a slotted spoon, transfer the sausage mixture to a large bowl and cool.
2. Mix in 1/2 cup parmesan, worcestershire sauce, and garlic powder, then the cream cheese. Season filling with salt and pepper to taste, then mix in egg yolk.
3. Brush a 15 by 10 X 2 baking dish with olive oil to coat. Brush cavity of each mushroom cap with white wine, fill with a scant tablespoon of filling, and sprinkle with some of the remaining parmesan cheese. Arrange mushrooms, filling side up, in prepared dish. [Can be made up to 1 day ahead. Cover and chill.]
4. Preheat oven to 350 degrees. Bake uncovered until mushrooms are tender and filling is brown on top, about 25 minutes.

This recipe is amazing. My kids all love it too. She has a to0n of stuffed mushroom recipes, we like the French onion soup ones too.

I make these and people always ask for the recipe...
Ingredients Makes 12 large mushrooms
12 whole fresh mushrooms 1 tablespoon vegetable oil 1 tablespoon minced garlic 1 (8 ounce) package cream cheese, softened 1/4 cup grated Parmesan cheese 1/4 teaspoon ground black pepper 1/4 teaspoon onion powder 2 tablespoons, minced onion salt
Directions 1.Preheat oven to 350 degrees F (175 degrees C). Spray a baking sheet with cooking spray. Clean mushrooms with a damp paper towel. Carefully break off stems. Chop stems extremely fine, discarding tough end of stems. 2.Heat oil in a large skillet over medium heat. Add garlic and chopped mushroom stems to the skillet. Fry until any moisture has disappeared, taking care not to burn garlic. Set aside to cool. 3.When garlic and mushroom mixture is no longer hot, stir in cream cheese, Parmesan cheese, black pepper, onion powder and cayenne pepper. Mixture should be very thick. Using a little spoon, fill each mushroom cap with a generous amount of stuffing. Arrange the mushroom caps on prepared cookie sheet. 4.Bake for 20 minutes in the preheated oven, or until the mushrooms are piping hot and liquid starts to form under caps

This is my fav....super easy, super quick, and pretty healthy Obviously change up your measurements for more than 4 servings, lol
4 large mushroom caps 4 (3/4 ounce) wedges Laughing Cow light garlic and herb cheese 1/4 cup Italian style breadcrumbs
Directions:
1 Unwrap cheeses and place in microwave for 30sec to minute to soften.
2 Combine together crumbs, mushroom stems (chopped) and cheese.
3 Take spoonfuls and fill mushroom caps. Place mushroom caps filling side up on UNGREASED cookie sheet.
4 Cook 20 min at 400 degrees Farenheit or until stuffing is lightly browned on top.
5 Let cool, then serve. Mushrooms will be juicy.

My Dad makes them - similar ingredients as the recipes listed above but one tip that I think any good stuffed mushroom recipe can benefit from, regardless of how it is done, is to finely chop the stems of the mushrooms and mix it in with whatever else makes up the stuffing mixture. That and good chicken stock to keep the mixture moist is my Dad's secret yumtastic flavor weapon

Nope! No breadcrumbs at all! What i do though is sprinkle parm on the top of every mushroom to make it a little crispy on top. Also, I put the filling in a big zip lock and cut off one of the corners and that's how I fill each mushroom, so much easier than spooning it in

I ended up making crab/cream cheese stuffed mushrooms. the filling was great but the mushrooms themselves tasted too earthy.
