Fondue for at home - recipes please

My mom got DH and I a fondue pot so we can have a romantic fondue night without the Chat Icon of The Melting Pot. My MIL bought me a fondue cookbook but I would love to try "tried and true" recipes.

I make an easy cheese fondue...grate some high-quality swiss and gruyere, and toss it with flour. Heat some wine in the pot (maybe 1/2 cup) and toss in the cheese. Finish with some grated nutmeg.

I just made
THIS ONE the other night. Made it with steak, chicken, potstickers and veggies. It was delicious Chat Icon

2 bay leaves
2 garlic cloves, minced
2 teaspoons dried parsley
2 teaspoons fresh ground pepper
2 (10 1/2 ounce) cans nonfat beef broth
0.5 (750 ml) bottle dry white wine or 1 cup water
2 cups water
1 (1 ounce) package French onion soup mix
0.5 (8 ounce) bottle of heinz seafood sauce

Directions:

1 Mix all the ingredients in your fondue pot, and simmer for 1 hour.

2 When you are ready to start, bring the broth to a boil.

I use this as a base, but make a few changes thanks to common sense and the reviews.
Three Cheese Fondue . It makes a ton so I cut it in half and the last time I did it I only did gruyere and cheddar, about 4 ounces each, and it was perfect for DH and I (although if there was more we would have eaten it anyway!)

Here's how I do it:

1/2 cup dry white wine
1 clove garlic
1/2 tablespoon all-purpose flour
4 ounces Gruyere cheese
4 ounces sharp Cheddar cheese
4 ounces Emmentaler cheese

1. Grate the cheese into a large bowl. Add the flour and toss it all together.
2. Warm the pot. Slice the garlic in half and rub the pot with it. Add in the wine.
3. Add the cheese in a few batches. Stir in a figure 8 pattern until the cheese melts before adding the next batch until all the cheese is incorporated.

I made this one for New Year's but doubled it:

Three-Cheese Fondue with Champagne
•4 teaspoons cornstarch
•1 tablespoon fresh lemon juice
•1 1/4 cups dry (brut) Champagne
•1 large shallot, chopped
•2 cups coarsely grated Gruyère cheese (about 7 ounces)
•1 1/3 cups coarsely grated Emmenthal cheese (about 5 ounces)
•1/2 cup diced rindless Brie or Camembert cheese (about 3 ounces)
•Generous pinch of ground nutmeg
•Pinch of ground white pepper
•1 French-bread baguette, crust left on, bread cut into 1-inch cubes
Stir cornstarch and lemon juice in small bowl until cornstarch dissolves; set aside. Combine Champagne and shallot in fondue pot or heavy medium saucepan; simmer over medium heat 2 minutes. Remove pot from heat. Add all cheeses and stir to combine. Stir in cornstarch mixture. Return fondue pot to medium heat and stir until cheeses are melted and smooth and fondue thickens and boils, about 12 minutes. Season fondue with nutmeg and white pepper. Place over candle or canned heat burner to keep warm.

I served it with homemade soft pretzels, grilled chicken cubes, ham cubes & croissant cubes
