I want my oven going ALL WEEKEND - recipes for meat in oven, please?!

Hi!
My post basically says it all.

I can do a roasted chicken, but what else goes in the oven?

suggestions that are kid friendly pretty please?

Baked ziti/lasagna
Roasted broccoli or carrots
Banana bread
Choc chip cookies (going to make those myself!)

I would do an eye round roast, a brisket (though that should marinate for 24 hours beforehand), pork loin, and chicken thighs (skin on).

I thought about ziti. I don't like ricotta cheese, but i'd like to introduce it to my kids...

maybe i will. a small batch so it doesn't get wasted.

I plan on making this Lasagna tonight.

I usually don't make things with cream soup and all that processed stuff but I gave this a try last week and it was really good. Go with low sodium ingredients if you can though. No Peek Beef Tips

I love roast beef with gravy but mine always ends up over done.

You can always make it with a bechamel sauce instead of ricotta.

Ina Garten just made this truffeled filet of beef sandwich on her show last weekend - it looked amazing. The show was all about using your oven at high and low temperatures. For some reason the link to food network won't work, but I'm dying to make the beef sandwich. YUM

Double the amount (even more of the brown sugar). Strange I make it all the time and it's so tasty.

THANKS SO MUCH!

So far, brownies, meatballs was all we accomplished..

Tomorrow is bacon in the oven, small baked ziti (made homemade sauce today), roasted chicken, cookies, probably the easy garlic chicken (doubling the brown sugar).

Grilled cheese sandwiches for lunch (i'll figure out a way to put them in oven while something else is in there...)

Even my DD, who hates meat, will eat a bit of this.

Better Homes and Gardens Cookbook recipe for Best Loved Meatloaf

Let me tell you, I HATE meatloaf but this recipe is so delicious. To die for!!! DH loves it. The glaze you make at the end tastes SOOO good, I tend to like it sweeter so I use a bit more brown sugar.


Meat Loaf
Prep: 20 minutes
Bake: 1 hour 10 minutes

2 eggs, beaten
3/4 cup milk
2/3 cup fine dry bread crumbs
1/4 cup finely chopped onion
1 tablespoon parsley
1 teaspoon salt
1/2 teaspoon dried leaf sage, basil, or oregano, crushed (I use oregano only for this, bc I just don't like sage or basil)
1/8 teaspoon black pepper (I omit this, hate black pepper)
1-1/2 pounds lean ground beef, lamb, or pork (I use beef only)
1/4 cup ketchup
2 tablespoons packed brown sugar
1 teaspoon dry mustard

Directions
1. In a medium bowl combine eggs and milk; stir in bread crumbs, onion, parsley, salt, sage, and pepper. Add ground meat; mix well. Lightly pat mixture into an 8x4x2-inch loaf pan.

2. Bake in a 350 degree F oven for 1 to 1-1/4 hours or until internal temperature registers 160 degrees F. Spoon off fat. In a bowl combine ketchup, sugar, and mustard; spread over meat. Bake for 10 minutes more. Let stand for 10 minutes before cutting into eight slices.

3. Makes 8 servings

I normally don't eat meatloaf but recently got this recipe from a friend and I love it.

1 lb meat (beef or turkey)
1 jar of salsa
A lot of crushed up tortilla chips

Mix everything together and bake like you would a meatloaf. Add some shreaded cheese on top if you want.

DAMN!! I just used all my chopped meat on taco meat !! GRRR.
i will make it this weekend after i find out who has chopped meat the cheapest.


I am making Garlic Chicken (with the brown sugar) tonight.
