Anyone have simple recipes that can be made on the weekend
then easily used during the week?
So far we do a crock pot with a beef roast and a bottle of BBQ sauce in it
Pasta and meatballs one night (we make the meatballs and then freeze them)
what else is not too time consuming to prep on the weekend and will be yummy during the week?

roast a big ol chicken.
you can use it to make chicken tortellini soup, chicken tacos, chicken salad etc.

I made ribs in the crock pot last weekend. Threw in 1/2 a bottle of store brand BBQ sauce, some water, brown sugar, salt and peppered the meat. They fell off the bone.
I made home-made sweet potato fries on the side.
Also sausage and peppers in the crock pot.
I also buy store-brand or Pillsbury pizza dough and make a pizza for at least one meal during the week. Serve with a salad on the side.

Spaghetti on the weekend turns into Spaghetti Pie during the week. Roast Beef on the weekend turns into Roast beef hash or hot open faced sandwiches during the week. Mashed potatoes on the weekend can be reheated as mashed potatoes during the week - or you can make a potato soup or potato croquettes or even shepherd's pie with them. A simple ham on the weekend finds new life in ham and eggs (as is) or ham and egg frittata during the week.

I always like to make a big tossed salad and have it as a side dish - I usually get it to last until Thursday. I put a moist paper towel over the salad bowl and cover in plastic wrap. The lettuce likes the humidity.
I really make all kinds of things on sunday to eat later. Baked chicken in sauce (cream of mushroom, cream of chicken, red sauce, etc.), enchaladas, meatloaf, chili, etc.
I usually try to cook 3 meals on Sunday. This gets us through Sunday, Monday and Tuesday. Then Wed is either leftovers or something easy and the same on Thursday.

I've never MADE spaghetti pie.. but I've eaten it and it was fantastic.. I'll be making it this week.

Yes, I made this for the first time for DH last week and he loved it. It was actually better the second day!!!
