shredded coconut flakes

Any recipes that use shredded coconut flakes? Please share. I used it for coconut cookies and for coconut chicken but I still have a huge bag leftover and would like to use it up so it is no longer taking up precious space in my pantry!! TIA!!!

coconut shrimp......yummmmm


1.In medium bowl, combine egg, 1/2 cup flour, beer and baking powder. Place 1/4 cup flour and coconut in two separate bowls.

2.Hold shrimp by tail, and dredge in flour, shaking off excess flour. Dip in egg/beer batter; allow excess to drip off. Roll shrimp in coconut, and place on a baking sheet lined with wax paper. Refrigerate for 30 minutes. Meanwhile, heat oil to 350 degrees F (175 degrees C) in a deep-fryer.

3.Fry shrimp in batches: cook, turning once, for 2 to 3 minutes, or until golden brown. Using tongs, remove shrimp to paper towels to drain. Serve warm with your favorite dipping sauce.

So funny I saw this post..I just made a recipe tonight

Brazilian coconut truffles - beijinho

I went to a birthday party of a friends daughter and she had these on the dessert table...and I couldn't stop eating them...they were soooo good!

After I found the recipe online and made it... I got the exact recipe she used which is a little different...so if the ones i made don't taste as good when they are ready tomorrow I will try her recipe tomorrow!


Here is her recipe

1 can of condensed milk
1 bag of dehidratred coconut flakes usually 100grams( unsweetened )
1 spoon of margarine
mix all in pan, then turn the heat on on medium/low ALWAYS stirring until it becomes thicker) aproximately 10 min) you may need to lower heat towards the end so it does not burn.
when done , let it cool completely before making balls.
make balls and roll them into the same coconut used in the recipe voila!!

Put it in your fridge and use it in your oatmeal, on top of pancakes, in yogurt, etc.

I also use it in granola bars.

In Indian cooking, we use it in veggie sides.

I made this last week and everyone really enjoyed them:

Chocolate Coconut Bars

Also, I mold candy and I've mixed the coconut in with my melted chocolate and it comes out yummy.
