passover meals
What is everyone making for passover this year??? trying to figure out what to make for family dinner monday

For the seder hard boiled egg salt water celery gifilte fish (home made) haroses (we make a double portion as it is so popular) matzah matzah ball soup (with chicken, carrots and mandelin) salad the first night it is usually a turkey the second night it is usually a brisket apple sauce cranberry sauce potatoes (mashed or cubed or baked) carrots and apricots or steamed broccoli vegetarian chopped liver
desserts my triple layer chocolate mousse cake (flour-less chocolate cake, chocolate mousse, white chocolate mouse) - search my user name for the recipe here. I have posted it before. The one difficult to find ingredient is kojel unflavored gelatin - but Fairway usually has it. fruits (strawberries, pineapple, melons) I am going to make something new this year - a lemon curd cake with fresh blueberries. My grandma's walnut sponge cake I bought a bunch of kosher for passover chocolate truffles and rainbow cookies.
EDIT TO ADD I bumped a passover meal post: dinner options salmon roasted chicken chicken nuggets with grated potato crust (you could also do this for a salom as well) steak burgers (lettuce instead of a bun) or meatloaf lamb or veal chops
sides potato pancakes sweet potato pancakes french fries baked potato roasted potato apple sauce veggies (steamed - just no peas or corn) salad
lunch options tuna fish chicken salad matzah pizza turkey or roast beef roll ups salad almond butter/jelly on matzah
breakfast yogurt fruit granola matzah brie passover muffins passover french toast hard boiled, poached, scrambled eggs omlet

I went to a seder tonight. They had: A big salad with different veggies haroses Matzoh ball veggie soup Roasted Cauliflower Steamed Broccoli Quinoa and craisin salad Beet Salad Potato and carrot salad Roasted , maple syrup glazed salmon
Dessert: Macaroons Date and almond bites Flourless, almond brownies Ice cream

We had 15 at my house for Seder yesterday. This is what we had...
Nosh before Seder... Veggie and dip, chopped liver, potato chips and dip
Seder Gefilte Fish matzoh ball soup Brisket lemon Chicken peach Farfel pudding Eggplant pancakes with tomatoes( for vegetarians at table Steamed broccoli baked Sweet potatoes Charoset.
Dessert Fruit platter Chocolate Spnge cake Chocolate chip mandel bread Assorted cookies bought at shop rite- black and whites, rainbow cookies, and assorted butter cookies

Throughout the week I usually have a variety of things:
-for the seder: we do the traditional things... matzoh ball soup, potato pancakes, matzah, salt water with potatoes, hard boiled eggs, onions, parsley, etc. then we usually have a brisket or turkey for the main meal with vegetable sides and for dessert macaroons, a variety of candies, and passover cakes.
for the other nights: -turkey with applesauce and cranberry sauce -buffalo chicken with baked potatoes and coleslaw -coconut chicken with orange marmalade-soy sauce and broccoli with garlic and mashed sweet potatoes -breakfast for dinner: usually matzoh brie with applesauce and sour cream, or matzoh with cream cheese and jelly, sausage, eggs (all ways, omelets, scrambled, hard boiled, crust-less quiche, etc.) -grilled chicken over greek salads -steak with roasted red baby potatoes in steak seasoning and vegetables or a salad -horseradish chicken
