Matzo balls
The mix says to leave the batter in the fridge for at least 15 minutes prior to making them. Think I can leave it overnight?

I always leave mine overnight, but I don't use a mix...

I made the mix this morning, so it will sit in the fridge all day. I think it should be fine.

Overnight is fine! Sometimes I just give it a few minutes to "warm up". I find if you drop them right away they come out a little harder.
