What to do with this roasted chicken tonight?
I roasted a whole chicken last night but we wound up having something else for dinner instead. What should I do with this chicken now? (with recipe please!)

I've never made it before, so I can't vouch for it, but it does call for 2 cups of cooked (shredded) chicken.
I know you wanted recipes, but I would probably do something like a salad topped with chicken, or wraps or tacos, or chicken salad sandwiches on good bread. Not creative, I know!

I made these chicken and spinach flautas with leftover roasted chicken. I just mix the shredded chicken with steamed spinach and shredded cheese, roll in tortillas, and bake. They are great to throw in the freezer and then pop in the toaster oven for an easy lunch.

I know its a little late, but I would do chicken enchiladas....I mix the shredded chicken with enchilada sauce and some cheese, then wrap it in flour tortillas and smother it in more enchilada sauce and cheese...sometimes I add in beans too. It's one of my family's favorite meals...

I think I am making this tonight!
It was pretty good - Definitely easy to make if the chicken is pre-cooked. I mean, I wouldn't say it was amazing, but it was good, and DH also liked it (not always the case with WW friendly recipes). Doing WW, I am trying to stick to the portion sizes, but I definitely needed a salad or something to round it out as a dinner. Will be good for lunch as leftovers.
