If you've never roasted a whole chicken before... come on in!
Okay I have a confession to make.
Up until Saturday, I had never roasted a whole chicken myself! For some reason, I always felt really intimidated by whole chickens! Hand me a breast, leg, thigh... I'm good. But never a whole chicken!
Anyhoo - I bought a package of 2 whole chickens at costco ($.99/lb) and decided that I needed to conquer this fear!
The Pioneer Woman has a great picture-by-picture tutorial and recipe that you should all try!
The only thing that isn't mentioned is removing everything from inside of the chicken before starting.
There are pictures for each step and it made it SO easy!
I couldn't believe how simple it was. We'll never buy a Rotisserie chicken again!! 
(I served the chicken whole on a platter with couscous mixed with herbs & mushrooms and burnt broccoli.

Rob's favorite meal is roasted chicken! And now that you've mastered the simple version you can start to change it up at will! I brine it sometimes, twine it most of the time, use variations of herbs and different seasoning - sometimes use orange instead of lemon, sometimes use lemons and oranges, put seasoning under the skin, use butter instead of olive oil - use butter and olive oil - us no butter or olive oil. I baste or sometimes I don't.
It's beautiful and versatile and easy as pie!

So glad you found it so easy!!! I love roasting our chickens.
Just bought a little bracket thingy for Beer Can Chicken and that is really good too. You don't really need the bracket though, but I only spent $3 on it so I can't complain.
If you want a recipe for left overs, left me know.

My coworker is terrified of making a whole chicken too! 
You can make a chicken pot pie with the leftovers too.
My little girl loves it! I bet Loey does too
