Melting Chocolate in Crock Pot!

I just had to share this because it was earth shattering and life changing for me. I love to bake and in my adventures, I work a lot with chocolate. We just did a whole SLEW of easter baskets for friends, family, and co-workers. We also get a ton of requests for cake pops. I've always hated working with chocolate since it never stays that wonderful melted consistency for very long. NOT ANYMORE! Pinterest (and theyummylife.com) know all and tell all! I had to do 200 cake pops (207, but really, who's counting? Chat Icon) this weekend for Staff Appreciation Day at work. I don't think we ever would've been able to do it if not for the crock pot. We did melt the original chocolate in the microwave (several 30-45 second intervals at 30% power, stirring in between), but kept the chocolate in heat resistent oversized coffee mugs in the crock pot. The crock pot was filled about halfway up the sides of the coffee mugs with water and set to low. It kept all of our chocolate melted for 4 hours straight without having it seize at all. When we needed more, we just stirred in more chips. The additional chips would take about 2 minutes to melt into the rest. I don't think I'll EVER melt chocolate any other way again!

I couldn't believe how perfectly it worked! I used to HATE dipping cake pops, this made it a breeze! I'd always have trouble because the chocolate would thicken or burn and it'd be lumpy and it would ruin my cake pops. We made 207 pops and only ONE got messed up- and that was our fault, we pushed the stick in too far. Chat Icon Chat Icon

OK just one stupid question. Did you dip the cake pops into the mugs or did you pour out what you needed into a larger bowl and just replenish by melting in the crockpot? I think I'd make a mess of it myself!
