Can I marinate pork overnight?
Sorry if this is a weird question but I am currently marinating cubes of pork loin to make pork souvlaki tomorrow. It's basically oil, spices, garlic, onion, vinegar and lemon juice. The recipe does say marinate overnight but it is a little white. I'm afraid the acid is "cooking" the meat? Is this normal?

I would think the lemon is starting to cook it. I don't marinate more than a few hours anything with lemon/acidic in it.

Can I marinate pork overnight?
I've made several different dishes with lemon juice/vinegar/garlic/seasonings and marinated overnight with no problems.
