Baking cookies how far in advance
...Can I make them? How would you store them until party?

Ive baked them a week or two in advance and frozen them (depending on type of cookie of course). I just freeze them in layers on the waxed paper.

I usually do my baking the day before, but I would do 2 days before. Store them in an air tight container.

Depends on the type of cookies? I like to make my chocolate chip as last minute as possible since I like to eat them right out of the oven. For rolled cookies that I plan to decorate with royal icing, about a 5-7 days in advance and decorate them about 2-3 days in advance.
I always store in airtight tupperware with wax paper in between layers.
ETA: I say 2 days in advance for butter/sugar rolled cookies because if you decorate them right away, you run the risk of some oils escaping into your royal icing and messing up your design! I've had it happen to me.

I like to bake no more than two days out from the event. The fresher, the better IMO.
