Guacamole in the fridge
We're having company later, and I'd like to serve guacamole around 3. I'm worried that if I make it now, it will brown by the time people get there. If I keep it in the fridge, it should be okay, right?
I usually just make it right before, but I have SO much to do today...I'd rather just get each and every ounce of prep done.

Yes, you can. Take a piece of plastic wrap and press it down over the top of the guacamole to seal out the air before you put it in the fridge. I've done it and it works well to make it ahead of time.

Sprinkle some lemon juice on it and cover it with the plastic wrap.

this, except I would use lime. you want to make sure the surface of the guac is as smooth as possible.

Never tried this but heard if you keep the pit inside the guacamole, it won't turn brown.

I never had an issue. I make it ahead all the time. The trick is to add the lime juice as soon as you mash the avocados. Mix it well then add your other ingredients. It will be fine. The lime prevents browning. Mine never browned.

I've never had an issue either...I do the smooth top layer, pit, lime, & Saran on top steps.
