Looking for easy cassarole recipes
Two pots/dishes....
Sausage polenta casserole 1 pound bulk sausage (or removing casings) 1round tube polenta (like the cookies) Marinara sauce Mozzarella cheese (I like a lot so I use a whole bag of grated cheese)
Brown sausage, add sauce Slice polenta and bake 400-425 until golden brown top polenta w sauce/sausage, top w cheese. Bake until bubbly/cheese melts.
Cheesy Chicken Broc casserole 1 pound chicken 1 bag frozen broc flororetts (warmed) 1 jar Ragu Double Cheddar Sauce (which also makes amazing Mac and cheese) Breadcrumbs
Cook 1 pound chicken (I like it boiled) Put in the bottom of the dish, top w broc, cheese, breadcrumbs. Bake until bubbly/breadcrumb are brown.

Re: Looking for easy cassarole recipes
The first recipe is really the only one dish meal. I find most casseroles a lot of work since you're usually cooking the meat and a starch separately and then baking together in yet another dish/step. The last recipe is pretty easy although you're still cooking the meat in advance.
Baked Ravioli
Chicken borccoli noodle casserole
Ham and Broccoli Bake
Cheeseburger Pie

Re: Looking for easy cassarole recipes
Ham and swiss casserole (from Taste of Home)
8 ounces uncooked linguine, broken in half (I use any pasta I have, never linguine, I am not a fan of flat noodles - I think I did it with elbows last time)
2 cups cubed fully cooked ham (I just buy a ham steak or ham sliced thick from the deli)
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
2-1/2 cups (10 ounces) shredded Swiss cheese, divided
8 ounces sour cream
1 medium onion, chopped
1/2 cup finely chopped green pepper (I've omitted in the past)
2 tablespoons butter, melted
1. Cook linguine according to package directions; drain. Meanwhile, in a large bowl combine the ham, soup, 2 cups cheese, sour cream, onion, green pepper and butter. Add the pasta; toss to coat.
2. Transfer to a greased 13-in. x 9-in. baking dish. Cover and bake at 350° for 35 minutes. Uncover; sprinkle with remaining cheese. Bake 15-20 minutes longer or until cheese is melted. Yield: 8 servings.

Re: Looking for easy cassarole recipes
I love this recipe for easy weeknight dinners. It's not a casserole but still super simple!
Crispy Onion Chicken
