Chicken Soup?
How do you make it? I made it once by cooking boneless chicken breast ahead of time & then throwing it in the pot of broth with veggies for an hour- chicken was dry.
I have some chicken drums in my fridge I was hoping to use for a soup. Can I throw the uncooked chicken in my pot of broth? How long do I simmer it for?

I use a whole cut-up chicken to make the soup - the bones and dark meat give it more flavor and richness from the natural gelatin.
The breast meat tastes dry if cooked in the soup, so I poach it separately then add it at the end. The dark meat gets chopped up and added to the soup.

i throw the uncooked chicken usually thighs wings and maybe a breast in with a full pot of water, salt and pepper, celery, carrots and a chopped onion.
i let it simmer probably 3 hours.
I am going to try this in the crock pot next!

I throw a bunch of chicken stock and a little water in a pot. Cut up and onion, celery, carrots. Add some thyme and pepper. Then I cook some chciken breasts and shred it - add that to the pot. Let simmer covered for about 30 minutes until the carrots are tender. At the end I add some cooked pasta (the little accini pepi works well).
