Re: baked ziti

I never use a recipe.........just learned from my family when I was young so I throw it together to taste.

But my best tip for awesome ziti.........cube the mozzarella and toss it with the ricotta and an egg to help bind it. Then LAYER your ziti, never toss the pasta with the sauce and cheese. You end up with pink pasta and the ricotta disappears. Gross.

Do a layer of sauce, then pasta, then globs of the cheese mixture all over. Continue layering until you fill the pan. Always use more sauce then you think is necessary, the pasta absorbs a lot and there is nothing worse then dry pasta. Layering everything will make the most gooey, cheesy, delicious baked ziti.

And use homemade sauce. ALWAYS homemade sauce. Jar sauce is gross. Chat Icon

Oh not the Victoria Marinara. It is absolutely amazing. I would make sauce if I could get mine to taste like that. Chat Icon

Same here but never put the mozzarella with the mixture (I use egg, parmesan cheese, garlic, onion, salt and pepper to flavor the ricotta) but I might just try that. I have always layered like you do also though. Exactly the same way.

You don't use mozzarella in your ziti!!! The horror!!!! Chat Icon Chat Icon Chat Icon The cheesier the better.

I don't really "flavor" the ricotta per se, all my flavor comes from the sauce. I like to make a really good meat sauce for ziti........usually use Italian sausage with fennel. So delish!!
