Jiff corn muffin mix

I just made a batch and followed the directions using the mix, 1 egg and1/3 milk. Baking was at 400 for 15-20 min I took them out in 15 and found them a bit dry.

I'm not a baker at all but if I add a half a stick of butter and 1 egg yolk only next time would they come out more moist?

I think it might still need the milk.

Also, there is a step on the box that you may have skipped about letting it sit for a couple of minutes and stirring it once more before it goes in the muffin tins. Not sure if this is important, but I do it and they don't seem dry. However, I also put butter on them so that makes it more moist.

I am not sure but its worth a try. I have always found that mix to be very dry. Whenever DH and I eat it, we spread butter directly on it.

Same here. I think cornbread as a rule is dry and meant to be slathered with butter, or served with something wet to dip it in like chili. Personally, I have found the more expensive the mixes, the moister they tend to be. Or just bigger and fluffier.

Their other Jiffy flavors are similar I have found in terms of being dry.

I had DH pick up corn bread mix to go with the chili I made today. He bought "Marie Calenders" in a yellow bag. All you add is water. I just took it out of the oven and it was really tasty and moist.

I believe allowing them to sit out before baking is what creates the dome or almost pointed shape on the top of the muffin. If they do not rest, the tops will be more flat. I *think*.

Mix the batter according to the directions and mix a box of yellow cake mix according to the directions then combine the 2 batters and bake. That is the copycat recipe for Boston Market cornbread. Delish!!!!

I've made them a few times and they're always dry! Maybe I'm doing something wrong, but I didn't like the taste too much either.
