Friends coming over tonite -- what should I make?
Pasta (maybe linguine with garlic and broccoli, so there are veggies), garlic bread, salad?
Grilled chicken, roasted veg, brown rice pilaf?

Friends coming over tonite -- what should I make?
We always love doing tacos or enchiladas with rice and all the fixings.
Last weekend I wanted something very unthanksgivingish so we did greek. I made skinnytaste's greek turkey meatballs (you can form them, leave in the fridge, and then even bake in the oven), ST tzaziki, pita bread, orzo, and ina garten's greek salad. It was different and went over really well. Not super easy but you can do most of it ahead of time.

roasted chickens are super easy. Chicken marsala, chicken francaise with a bowl of pasta and a big salad is easy too. You could do make your own tacos and have some sides and stuff.

grilled chicken is easy and healthy and the yummy parts are all different toppings/dipping sauces.
You could have out olive tapenade, hummus, an avocado creme or guacamole, tzatziki sauce, a fresh tomato salsa, mushroom gravy, anything really...
Then they could put the different toppings or sauces on their grilled chicken.
For sides, you can do grilled vegetables and bread or a pasta salad.
