There are great pinterest projects. We did a monster with 100 googly eyes...however, if anyone is going to take my suggestion, buy the peel and stick googly eyes because trying to get my son to glue 100 googly eyes down was really annoying!
We're doing this but I do the gluing and she just picks out which eye she wants where.
We did the same thing. I glued, he stuck them on.

Re: 100th day projects
We had a choice of brining in a Baggie filled with 100 items or making a 100 poster.
They also dressed up as a 100yo person....SO.....I used oak tag & created a 100$bill. It said 100 days of school. The zip code where money has the numbers, her last name instead of "franklin". I also attached a kite & key. She loved it & walked into school holding it up to herself.

Oops, late on this. We made a poster on thick card stock of 10 little gum ball machines. I used dome lids from Starbucks as the glass for the machines and real gum balls! We had so much fun doing it!

Re: 100th day projects
I bookmarked a bunch of projects online. My son loves soup, so he wanted 100 letters of alphabet soup. I made a pot from scrapbooking paper and he stuck letters to it. We also had him write down some wishes for things he wants to have 100 of. I should post the finished product. It's coming out great.
This was the example. We changed it a bit but this is the idea.

Re: 100th day projects
We glued 50 crayons to the top of a canvas and 50 to the bottom, then took a hair dryer and melted the crayons on both sides into each other. It came out really great!
