Rice balls
I do, but honestly I dont measure anything I just go by "feel" so to speak.
White rice egg breadcrumbs grated cheese mozzarella diced ham or prosciutto
Cook the rice and let cool, stir in egg, cheeses and ham. Form into rice balls, coat in egg then breadcrumb, then repeat. Fry until golden brown.

Re: Rice balls
We made Giada's a few months ago and they were great.
Arancini
You can definitely just make plain risotto but whatever you add will be yummy.

I use Giada's recipe to make rice balls too. I make them every year for Christmas and they are always a huge hit. I've used all different kinds of risotto too. Always tasty!
