Ideas??
so... my ILs live 4.5 hours away and are coming out for Easter. They'lll be here from Thursday night until Monday morning. I already made reservations on Easter Sunday for brunch at 11 AM... so I figure that takes care of breakfast and lunch. (the place has carving stations, ham, turkey, breakfast foods, soups, etc). BUT they'll be here for dinner, too... so I'm not sure what to do for dinner. I don't think I need to make a huge dinner, since we're having a big brunch. But I need to do SOMETHING... any ideas?? some kind of fancy soup? a nice crockpot thing I could do? I have a 3 year old... so easy is definitely key, too!! ugh!! I really miss how things were growing up with my family- everybody lived close by... none of this visiting for days BS!!

Ideas??
I would just make a pot of sauce and make pasta, ravioli or baked ziti with a big salad and bread. Super easy.

I have a pot roast crockpot recipe that everyone loves, and it is soooo easy!
For the meat part, I always get a pot roast...my sister in law got the one called for in the recipe, and said it was so tough.

ITA. You could even make it ahead of time and just warm it up for dinner.
