Apples & peanut butter?
Personally I think the best you can do is to give her what you're having.
I know it's hard to see them not eat. I was there too. We still make broccoli almost every night because it's the only vegetable one of our kids will eat.

DD is loving broccoli these days and is a picky eater. Steam it in chicken broth and then sprinke some shredded cheese on top. You can make soup, chicken cutlets, pasta, lots of cut up fruit, etc.

We are having the same issue...Kaydyn has decided she does not want to eat meat anymore.
At a BBQ over the weekend all she ate was crackers and salad.
Every once in a while we can get a chicken nugget in her but for the most part the only thing she eats is pasta and soup.

We are in the same boat as you--DS will consistently eat cheese (not melted), pizza, cottage cheese, most fruit, and yogurt. No meat except some chicken nuggets, no veggies except pureed or mashed.
I just can't have food wars with him anymore, and tried giving him what we ate only. If it's something he doesn't want, he just doesn't eat it, then begs us for treats later because he's hungry. I just couldn't deal with that, so he does get his piece of cheese or some fruit if he doesn't want what we're eating. May not be the best advice, but I think you need to figure out what works for you and DC.
DS is 17 months btw, I think it totally has a lot to do with their age.

One other suggestion, have you tried beans with her yet? DS will usually eat pork n beans. He'll also eat humus (sometimes) or black bean soup if it doesn't have a lot of chunky stuff in it.
Some moms think I'm nuts for feeding DS beans, but he hasn't had any serious gas/poop eruptions from them.

I started peanut butter and jelly at 12 months (we have no peanut allergies in my family) and they both love it. Cream cheese and jelly is a good alternative if you aren't comfortable giving peanut butter yet.
I don't know what you tried yet so here are some ideas that my 12 month old eats...
cereal bars (nutrigrain ones with the fruit inside) Scrambled eggs and cheese French toast or pancakes Rice Mac n Cheese (i throw in peas - or green balls as my DD calls them) meatballs, meatloaf, hamburger string cheese fruit cups or fresh fruit cut up soup (drain out the broth and just give the good stuff. Both my kids love Italian Wedding and all the campbells kids stuff - Dora, Cars, Goldfish with meatballs) give her some crackers on the side pasta with sauce or butter and parmesan cheese or oil and garlic with peas steamed peas, carrots, string beans with a little butter and salt grilled cheese (really toast with cheese) yogurt sweet potatoes french fries (baked) turkey and cheese rolls
can you tell my kids will eat anything!!

Baked beans (like pork & beans) are a staple food for kids in the UK, however my son won't eat them.
My advice is not to worry too much about being a creative cook for a picky kid, if she likes something, stick with it! (this is coming from a woman who feeds her kid Dora pasta from a tin every night)
