Vegetarian option at BBQ?
We are having a big BBQ with about 40-50 guests. 2 people are vegetarians and I want to make sure they will have enough to eat. We will have quite a few side dishes that a vegetarian could eat (grilled veggies, a few different salads), but the main dishes are different meats (burgers and hot dogs, chicken and pulled pork). What else can I make that the vegetarians can eat - doesn't necessarily have to be a "main dish" but something on the more substantial side.

Vegetarian option at BBQ?
I usually try to do a cold quinoa salad in that case since it offers lots of protein. I like a tabbouleh style best but I've done one with cumin and black beans and recently had one at a party that was an asian style with edemame that was very good.
Another option would be to grill some veggie burgers.

Veggie burgers or some nice meaty portobello caps. I marinate in olive oil and balsamic and toss on the grill....then top with fresh mozzarella, a slice of tomato and some basil.....so yummy!!!
For sides, like PP said, a quinoa salad, or a black bean and corn salad is nice too. My mom sometimes makes what she calls "avocado boats," corn, beans and salsa in a hollowed avocado.

I second portabellos. They're so good on the grill.

The only thing with the portabellos (YUM!) is that I don't want to make something that is only for the vegetarians - so I'd have to make a bazillion of them (or at least 40 lol) - so I kind of need something that is easier to make for a large group but still good for vegetarians.

Any salad could be a main meal 3 bean or black bean type salads Green salad Pasta salad Brown Rice pilaf but cold

I agree with veggie burgers or veggie kabobs, I also love portobello burgers.
I make this Caprese Quinoa Bake that everyone loves and it's pretty filling!

Vegetarian option at BBQ?
Sometimes if I go somewhere they will have a veggie burger for me and I feel bad not eating it, so I do. But I would skip the veggie burgers. I have a few friends/relatives that are vegetarian also and none of them eat them either. Plus they are going on the same grill as the meat. I usually fill up on pasta/potato salads and booze and I'm good! lol

I think what you have is fine. We have a few vegetarians in our family and they eat the sides, grilled veggies, pasta salad, reg salad. They usually do not want something from the grill because the grill was already used for the meat.

This. I am not a vegetarian but I don't eat red meat and not much chicken either. I love BBQ's though. Sides are my fav part. Pasta salad, potatoes, corn, veggies, etc. Usually nosh on the sides like veggies, hummus, chips and salsa and of course alcohol. By the time they grill I'm full anyway.

I agree with this. I love cold quinoa salad! If you don't want to do regular veggie burgers, Trader Joes has Pizza Veggie Burgers that are delicious.
