Freezing baked enchiladas?
Can I? I made too much and I don't want to eat them for leftovers because we have plans for the rest of the week.

I just made a huge batch too. I did freeze the leftovers. I don't see why not! Just make sure you wrap them tightly so they do t get freezer burned

Ehh, I don't know. I did this once and when I re-heated they were a mushy mess. Could have been the way I made them though. If the alternative is tossing them, then definitely give it a shot!
