Out of Office Message
I am trying to set up my Out of office reply so that I can just click it on when I am ready.
I am leaving the date open, saying : "I will be out of the office on maternity leave for the next few weeks. I will not be able to reply to most emails until I return."
I also want to add something about taking me off of large/ group emails as I get a TON and these FILL up my inbox and are a pain to delete, especially if I am going through weeks of them.
How would you word this part?

I'd just be straightforward:
"During my absence, please remove me from any and all communications that are not urgent and do not require my immediate attention. Thank you for your consideration."
You may have better success reaching out to coworkers beforehand. Personally, Im guilty of paying little attention to out of office responses and if I'm busy I'm likely going to forget or ignore the request.

I personally wouldn't put that in an out of office message. I would talk to my boss and coworkers ahead of time and they should know to delete you off the distro, even on existing correspondence.
Also, your boss may be ok with deactivating your email while you're out and activating it again once you return. Or automatically archive them.

I personally find most people don't read OOOs so I wouldn't bother adding the part about leaving you off of group emails. No matter what, you're going to have a lot of emails you'll have to go through.

My company would frown upon the part about taking me off group emails. I was still getting emails on my phone so I would just delete things and keep only important things

I think it would be too much trouble for them to delete you and add you back on so I just wouldn't say anything. When I came back from maternity leave I had a ton of emails to go through but deleted most of it.

I personally wouldn't leave the time open ended like that - I would either put an approximate date in, or just say I am out on leave.
I also wouldn't be asked to be removed from lists - I would just direct emails elsewhere.
