We feel Masago in Great Neck is the best value. We love Minado for special occasions. Sushi 560 and Sushi Republic are good too.

Not exactly Nassau, but Mizumi in Doiglaston is fantastic. They have the best variety of ayce sushi and sashimi, and even have uni (sea urchin).
