breakfast on the go

SO and i carpool to work most days.

i'm looking for something i can make a lot of, freeze, and nuke just before leaving the house that we can eat on the road.

help

What about an egg "muffin" cups?
Its like scrambled eggs- with veges, cheese, whatever you want- that you bake in muffin tins.
I bet you could freeze them and just microwave.

You can also do overnight oats in the crockpot and just dish it out the next day to take on the road- like in a thermos maybe.
Can be reheated the next few days.


I do hardboiled egss a lot for on the go breakfast- easy to grab and good protein.
Also yogurts and ready to drink protein shakes

Breakfast wraps?

I like turkey & egg whites.

ETA: Just saw you want to freeze them. Not sure if this will work.

I agree with PP on egg muffins you make in a muffin tin. So easy and you can make a variety of types.

You can also make blueberry muffins or any type and freeze those and heat them in the microwave.

I make a batch of whole wheat banana blueberry pancakes and freeze them. Then you can just heat them in the microwave before you go.

Skinnytaste has a bunch of breakfast items you can freeze and heat up.

Hard boiled eggs are easy to eat on the go.

Shakes/Smoothies are great too.

You can make breakfast sandwiches (like egg/egg white on english muffins with cheese or ham or whatever) and freeze them individually. Then reheat in microwave and go.

Muffins (and any baked good) definitely freeze well.

There are lots of recipes for homemade granola bars that are healthy on pinterest. Prob not for freezer, but you can make a big batch and keep in an airtight container for the week (or in fridge, depending on what's in them).

Greek yogurt parfaits or overnight oats in mason jars with fruit, nuts, etc. are a good grab and go option, but not sure if they would be good to eat in a car/while driving. They aren't freezable, but you can make several days worth at once.

If you prefer hot oatmeal, that's definitely freezable if you make a big batch and freeze individual portions to be reheated.

I've also made baked oatmeal (see Skinnytaste recipes) that would freeze well.

Not freezable (but again, you can make several in advance and then grab and go) - Sometimes I will just have a peanut butter or almond butter sandwich on high fiber bread or the 80 calorie pepperidge farm cinnamon swirl bread with a piece of fruit (like an apple or a banana). That's a healthy, filling breakfast with protein, and nothing is easier than a sandwich (or if you have time, you can make it on toast).

Overnight oats.

Make a batch of muffins and freeze them. Just defrost as needed. I make banana oat and nut muffins, which are very filling.

I've seen an idea on pinterest about make-ahead egg sandwiches, but I've never tried it.

I like VitaTops for a grab n go breakfast. They are frozen. It's like the top of a muffin packed with vitamins & fiber so it's pretty filling.

I make a batch of baked oatmeal bars and also make a tray of egg muffins. I would like to try to make a batch of pancake muffins.
