Quick dinner recipes
So tired of the same old same old. Anyone have any quick, interesting dinner recipes? Keep in mind 3 kids will be enjoying as well!

I feel the same way.
I make turkey meatballs that are so easy and kids love it. Ground turkey, egg, bread crumbs, Italian seasonings, lots of fresh grated cheese and I chop up spinach and add to it. Back for 30 mins. Make your own tacos with any ground beef, taco seasoning and add your own veggies and cheese. We do it in a burito. turkey lasagna baked marinated cutlets with baked garlic finger potatoes and steamed veggies meatloaf turkey chili
These are my usual go to easy and quick dinners that the kids love. DH is not a fan of my meatballs, but he doesn't like meatballs to begin with. The kids call them green meatballs bc I put a lot of chopped spinach in it, but there's a lot of cheese so they love it. LOL Chili is usually for the winter and Fall time. We also BBQ, do "make your own pizza nights" and I'll buy the dough from a pizza place. Someone sent me a recipe for caramelized chicken wings that came out good and was easy. Always up for some new ideas too

I make a great crockpot chicken tortellini soup. I'll find the recipe. Easy and kid friendly
Skinny Taste Chicken Broccoli Noodle casserole is soooo good and kids love it- but it's a bit of work. Not crazy but it's a bit more time consuming.
Skinny Taste Rice Ball Casserole is also delicious. You can even make that on a weekend and just reheat during the week.
Here is the crockpot chicken tortellini soup recipe.
Ingredients 1½ pounds boneless chicken breast 3 medium carrots, peeled and diced 3 stalks celery, diced 1 medium onion, diced 3 cloves garlic, minced 6 cups low sodium chicken broth 1 cup water 2 bay leaves 1 teaspoon Italian seasoning, or more to taste 2 cups cheese tortellini chopped fresh parsley for serving, if desired salt and pepper to taste Instructions Add all of the ingredients to a slow cooker except for the tortellini. Cook on low for 6 hours. Remove the cooked chicken from the slow cooker and shred or cube and add back to the slow cooker. Add in the tortellini and cook for 15 minutes or until they are cooked all the way through. Season with salt and pepper to taste. Discard bay leaves and serve immediately with chopped parsley, if desired.

I make a pork chop dish that's easy to throw together. We will make this as a "day 2" meal with leftover pork loin also
Chop cooked meat into cubes & mix with: Can of black beans Can of diced tomatoes Rice Season with cumin, garlic salt & chili powder to taste Serve with fresh avocado you can also serve with chips or tortillas
I also make an easy risotto, takes about 30 mins Sausage & Tomato Risotto
My kids will also eat the Knorr sauce packets - I make the creamy pesto and add in sauteed chicken & broccoli
We also make turkey burgers and freeze them, and serve on slider buns for the kids with frozen steamed veggies.

Quick dinner recipes
Pinterest is definitely my best friend for recipe inspiration.
I recently made stuffed pizza meatloaf that was different and yummy.
Slow cooker chicken tikka masala is a favorite of ours and I add a can of chickpeas bc my 2yo loves them in the sauce.
I've been intrigued by sheet pan dinners lately. I made a beaded lemon chicken with green beans and potatoes that came out great. I also did one that was chicken fajitas that was pretty good. We'll have those leftovers over rice tonight. I've saved a few others to try too.
Tomorrow I'm doing greek meatballs over rice with chopped veggies and tzaziki sauce. I also do homemade falafel over salads with tzaziki.
I prep main jar salads if I'm going to get home late so I just have to dump them in bowls at dinner time. Last night I made spinach salads with grilled chicken and hard boiled eggs from easter. I grill extra chicken for lunches or dinners later in the week. Yesterday I made yellow rice, pineapple salsa and added the extra grilled chicken and black beans for dh's lunches for the week.
Another easy dinner is to just dump a jar of pesto over chicken breasts and bake covered. Uncover the last 5 minutes and top with mozzarella.

Pinterest is def my go to for all types of recipes. It's incredible the amount of easy recipes u can find in there. I also like to follow skinnytaste, well plated, tasty, and a few others in FB. Most of their recipes require ingredients that u pretty much already have at home. But I must say that the easiest (and very yummy) recipe that I've ever encountered was by a LIW girl that shared it with me not too long ago. Here's the link..

most of my recipes come from skinnytaste. made her turkey burgers with zucchini last night that the kids liked with baked sweet potatoes and asparagus.
kids also love vodka sauce from iavarrone so i make that with some penne one night.
grilled cheese and soup (skinnytaste chicken soup, st broccoli cheddar or butternut squash soup)
grilled chicken, baked beans, broccoli,
trader joes boxed mac and cheese and i add peas to it.
