Any nice, quick, low-fat dinner recipes...
...for those of us who despise cooking?
Something quick and easy, tastes good, and won't destroy my diet...
...and no, not "take out"

Re: Any nice, quick, low-fat dinner recipes...
I have one recipe I found in Fitness Magazine that I use now and then-
Chicken breasts with mustard caper sauce
Ingredients 6 Boneless, skinless chicken breast halves (about 2 pounds total) 1/4 tsp Salt 1/8 tsp Black pepper 1 can (14.5 ounces) chicken broth 1/4 cup Drained capers 1/2 tsp Dried rosemary 1/4 tsp Dried thyme 2 tbsp Dijon mustard 1 tbsp Honey 41/2 cups Cooked hot couscous
Preparation Coat a large skillet with cooking spray. Place over medium-high heat. Season chicken on both sides with salt and pepper. Add to skillet: cook each side about 5-6 minutes, or until cooked through. Remove and keep warm.
Add broth, capers, rosemary and thyme to skillet; cook over medium-high heat, scraping up any browned bits from bottom of skillet, for 5 minutes. Remove skillet from heat; stir in the mustard and honey, Pour sauce over chicken and serve with couscous.

Heres one of my standards, chicken stir fry! takes 20 minutes and is totally healthy.
However much chicken you want, cut up into small cubes.
Spray a deep frying pan or wok with cooking spray and cook the chicken till it is slightly browned a cook through.
A a bag of frozen stir fry veggies, cook till they are hot. I usually add a dash or two of soy sauce and some red pepper flakes, but there are a whole variety of sauces you could get at someplace like Trader Joes. As long as you only use a little bit, they arent that many calories.
Cook a bag of instant brown rice and serve the chicken and veggies over it.
Viola, dinner!
