Quick dinner recipes (that tase good at room temp too)

Since having a baby, I only eat a decent meal when we order in or DH cooks. I really need to start doing some cooking, but there isn't much time to cook. And most of the time food is cold by the time I can actually eat it.

Does anyone have any suggestions of something quick I can make that might still taste good at room temp?

pesto with pasta
grilled chicken is fine at room temp
grilled veggies (or I guess roasted too)

You can always prepare things and reheat them... You can leave them in a covered pan and warm it when you are ready to eat. I do this all the time with everything, mashed potatoes, sausage peppers and onions, taco meat, fajitas...

You can make casseroles (lasagna, sheppards pie, mexican lasagna, etc and cut out a piece and reheat when its time to eat too!
