For those that have been to an All Inclusive in DR -- did you avoid eating anything in particular? I am so afraid of getting sick.

No. We ate what was served in the resort. We didn't have any issues.

I've been to 3 different all-inclusives in the DR - never had an issue with the food or drinks

Nope, never.
I pack Immodium for ALL my trips, just in case. Have never had to use it.

Yes, food is fine or even fresher than the US. Also my one gripe about a lot of these All Inclusive Resorts is they serve a lot of American or other cultural food, such as Asian themed restaurant.
The first two times I went to DR, I couldn't find Rice and Beans to save my life on the resorts. One time in Mexico we spent about an hour before we found Tacos a Pastor.

No, we enjoyed everything. As the PP said, the restaurants were themed everything but Dominican food.
