We've been doing that for years... 
Especially for b-days, since they get so many things from classmates. DS usually gets presents for at least a month... 
Christmas is usually spread out over 3 days, so they don't get totally overwhelmed in one day.

i do the same thing...it gets us through the winter months when its boring being indoors on snowy days, i... and also when toys that are out and they start to get "old" i rotate them and replace it with a new one. I like to do this sometimes when the kids are asleep so when they wake up its a surprise!
i think its overwhelming during the holidays with family giving SO many gifts along with what santa brings. DD got so many gifts she told me she wanted to take a BREAK from opening them! i dont even think she remembers half the stuff she got...so its not being a grinch its actually good for them!
