another easter dinner menu post....what am i missing? what could i use?
soon we will get the "what can i bring?" question from guests. i think we are pretty much set, but let me know if you see something missing:
Apps: *Deviled eggs *Shrimp Cocktail with various dipping sauces *Antipasto squares – little calzones made with meat and cheese *Artichoke and Red Pepper Frittata *lox and cheese bites
*Salad - Baby Greens with Pears, Nuts and Parmesan
Main: *Tofu parmagiana *lamb
Sides: *Rice ball casserole with soy meat *Stuffed tomatoes OR stuffed peppers (havent decided which...one is stuffed with mini pasta the other is stuffed with white beans) *portobella mushroom parmagiana *lemon pepper carrots *Roasted asparagus (or another veggies, TBD) *Baked salmon cakes
dessert: *fondue with fruit and cake to dip, maybe pretzels

Can I come over??? That menu is right up my alley besides the lamb lol but I think it sounds like plenty of food

thanks. actually the lamb is the only thing im not making/eating (MIL is bringing that)
any other suggestions? pair down the menu? move things to apps instead of sides?

I think your menu looks delicious, and I personally would love the things you are making. You have a great variety!
But you know your crowd - so if you have any pickier eaters (I know I have some basic meat and potatoes types), you may want to swap in a few simpler sides - maybe something potatoes or rice based? I am making twice-baked potatoes, which are always a hit, and are actually easy because I make them a day ahead of time and just bake them off 30 mins before dinner. Also, since you are doing the tofu parmesan, would you consider doing the portabellos a different way? (But I love parmesan, so both sound good!).
It looks like you may have some vegetarians among your guests. Will everyone who eats meat eat lamb? Depending on how many people you are having and their tastes, and if there are any kids, I might add in another meat, like turkey breast or some kind of chicken cutlets.
A lot of your apps sound like they are served cold or room temp, so if you wanted to add anything or swap something out (which I don't think you need to do), I would add a hot hors d'ourves.
I agree some more desserts could be good - cookies, brownies, cupcakes. I would assign that to guests if anyone asks. I usually ask guests to bring dessert or wine!

thanks christine, really useful! everyone that attends (aside from me) eats meat. but everyone also tries to not eat meat for health reasons....so yes, this will probably be the first holiday where only one meat is served. haha. hopefully they will live with it and there is enough of the variety to get them full. heck, maybe they;ll even like the tofu parm! i keep telling FIL that im making tofu, but he thinks im joking. little does he know!
i was thinking that the mushroom parm might be too much...maybe ill just have sauteed mushrooms instead?

I think sautéed mushrooms would be perfect!
And as far as the tofu, anything parmesan is good, and tofu always takes on the flavor of whatever sauces or flavorings it's in. So I bet if you don't tell them, they won't even know!

Honestly, I would add in a potato dish or a pasta dish. You really don't have a starch. I see the rice ball casserole but I don't think it counts as it has soy in it and even though I enjoy vegetarian and vegan dishes I won't eat anything soy based like tofu or soy crumbles etc. - I know many feel the same way.
