Another Thanksgiving question- gravy

Homemade or store bought? If homemade- any good recipes to share?

I do homemade. I put the turkey on top of cut up onions, apples, and celery, and add low sodium chicken broth and a dry white wine to the pan. When the turkey is done, I strain out the liquid at the bottom if the pan and use it Ito make a gravy. I make a roux with equal parts butter and flour (melt butter in sauce pan, then whisk in flour and cook it for a minute or so), and then I whisk in the liquid from the roasting pan. I use 1 tablespoon of butter and 1 tablespoon of flour for every cup if liquid. Bring it to a boil then reduce heat and simmer (gravy will thicken up). Taste and add seasoning if needed. It's really good! The wine adds great depth of flavor.

I do always keep a few jars of Heinz turkey gravy on hand in case I mess up the gravy or run out (I can add it yo the homemade to stretch it). But I've never had to use it yet (knock on wood!), so I often send the jarred gravy home with people who are taking leftovers.

I make a turkey stock the day or two before using extra wings and legs, adding pan drippings from the roasting pan the day of. Then thicken with a roux.

I wait all year for homemade thanksgiving gravy! I've tried to watch and learn my grandmother and aunt's recipe but I gave up bc it was too complicated. This year we're not doing our typically family get together so hopefully my mom and I can get it right.Chat Icon

They do a giblet broth the day before and then use that with the pan drippings. As far as I can tell, it's similar to this recipe. I know they add a little gravy master too.

This is exactly what I do too. I use a dry white wine, like Pinot. It really gives great flavor. Add salt, pepper, garlic to taste. If I need more liquid, I will add chicken broth or even some of the liquid I've used from cooking other veg. I also keep gravy master on hand, to give it the desired color.

honestly I just make a roux from the pan drippings using cornstarch and water to thicken and add in the pan drippings. I use Turkey stock in the bottom of the pan though and we stuff the turkey with sausage stuffing so all those flavors mix together. YUM!

Another Thanksgiving question- gravy

I use the turkey drippings for the gravy. After the turkey comes out I remove the Turkey from the roasting pan and add 4 or 5 cups of chicken stock to the drippings and let it boil on the stove in the roasting pan that the turkey cooked. I add a little gravy master and a little bit of Wondra sauce and gravy flour and stir it until it dissolves. Then i add some more and repeat that process until it thickens up.

I make a stock out of vegetables, turkey giblets, and necks. I strain the stock, then I mix it with the pan drippings, chopped necks and giblets, and thicken with wondra.
