I'm roasting a chicken too. Just rubbing oil on the outside, putting some fresh garlic under the skin and putting some fresh rosemary and onion inside. Makes a nice moist and flavorful chicken. Just making it with some rice.
I'm using barefoot contessa's recipe:
stuff cavity with a lemon, a head of garlic sliced along equator- with skin on & everything, a bunch of thyme and salt & pepper. Then I brush the entire chicken with melted butter and lay bacon on top of the bird....
I slice another lemon and lay around the base of the bird.
Roast at 425 for an hour and then take off bacon and roast for another 30 minutes. I save the bacon and put it in salad.

I just decided I am NOT cooking. I have been working on my thesis and I have been having technical difficulties all day! 
and I am not done yet
