Anyone have a good french onion soup recipe??
I want to make it this week, I have all the onions already now I just need a good recipe. I found so many online I just figured if someone had a good one they use already it would be better.

Here's mine:
I use 1 large sweet onion, 1 large Spring onion - or just a white onion, 1 large yellow onion and a whole shallot - thinly sliced.
Sautee onions in a bit of butter and a drizzle of olive oil. Add a sprinkle of sugar and a splash of gravy master.. cook over low heat until the onions start to carmelize. Add a good couple of chugs of sherry and deglaze by scraping bottom of pan to loosen the good bits that may have stuck. Add Beef stock, A splash of worcestershire and beef base and pepper to taste (I use beef base instead of salt or boullion). Cook for about 10 minutes.
Meanwhile... slice a french baguette into pieces that will fit in your ramekins. I toast them lightly in the oven for a few minutes.
Put a serving of soup in each ramekin, top with a slice of baguette and then top with cheese. I like a slice of provolone with a bit of mozzarella - or some shredded Gruyere. Put the whole thing in the oven and broil until cheese starts to bubble and turn brown.. then serve!
I have to also give shout out to Ophelia who posted Ina Garten's recipe which is one of the best I have ever had.. and may start to replace my own recipe!
