I saute carrots, celery, potatoes and onion for about 5 - 10 minutes in a little olive oil. Then add water and bring to boil. Once it boils, add chopped up peeled tomatoes, salt & pepper and let simmer. Boil lentils for about 10 -15 minutes in a separate pot. When veggies are almost cooked through, drain the lentils and add them to the veggie pot and let simmer about 10 - 15 minutes with veggies.
I serve with hot crusty italian bread, but you could add pasta or serve over pasta too.

I do pretty much the same minus tomatoes, plus a little red wine with the lentils before adding stock and at the end I drizzle evoo and grated parmesan.

I'm a lentil virgin Is there a reason you cook them separately first?

of course there....it's how my mom taught me! Haha, I really have no idea...I never tried it differently.

I was wondering how I could make this into something else b/c DS wouldn't eat it rolled up with swiss chard....it came to me... SOUP I think I can use the same ingredients, but like some of the tips suggest adding sausage/ground turkey or soy sausge/turkey....instead of the sauce add some tomatoes and stock. Maybe serve the cheese on top as a garnish!

I do this but only use a tbs of tomato paste instead of crushed tomates. And no potato. Instead I add in broken up spaghetti that I cook seperately.

Thats exactly what I do but I do use the potatoes.
