I just julienne them, toss in olive oil, s & P and roast for 30-40 minutes.
you could also slice them round and do the same as above...but I am thinking the "fry" look will work better on the little one

I cut into wedges, season with S/P, garlic powder , lay in oiled bake pan and bake 30-45min. depending on how crunchy you want them.
