I have 2 frozen packs in the fridge and have no idea what to do with them.

Rachael Ray has a really good recipe for braised pork chops. I made it with chicken last week. Let me see if I can link it...

we have a couple... we make one thats a rachael ray with balsalmic and thyme on them. its in her 30 minute meal cookbook. basically, you put some balsalmic on them and cook them in a frying pan on medium high for about 6 or 7 minutes. while that side is cooking, cut up lots of fresh thyme. after 6 or 7 minutes, flip them over and put the thyme on them. let them cook for another 5 or 6 minutes. comes out very yummy- and its really easy! ALSO- dh and i copied a recipe from our favorite mexican restaurant.. you have to LOVE garlic for this one: preheat the oven to like 375. brown the pork chops in a frying pan. THEN, put them in a baking pan with like 3 cloves of fresh chopped garlic on them, and lots of fresh cilantro. cook for about 20 minutes or so, until the pork chops are done.

they are really good breaded and pan fried. DH and I slice them thin and they take just minutes to cook on the pan

This is sooo good!!
BBQ Beer Pork Chops * 6 pork chops (thin sliced) * garlic powder * 1 (12 fluid ounce) can or bottle beer (Corona is the best - I've tried other kinds and they don't taste the same) * 1 (18 ounce) bottle bbq sauce * 1 onion, sliced
* Season pork chops with garlic powder and brown on both sides. Remove from pan. * Pour beer into pan, stir to get all the crust from the pork chops off the bottom of the pan. * Pour in bbq sauce. Stir together. * Add pork chops and onions. * Cover and simmer on low for 1 hour.
The sauce is great on mashed potatoes and as a salad dressing (my mom cuts up the left over pork chops and adds them to a salad with the sauce as the dressing).

Yes, I made it with boneless chicken. It was really good.

that sounds REALLY good and we have a ton of leftover Corona from Superbowl...

Nigella has a good one.
salt & pepper on chops, place in hot pan on med high until browned on both sides, remove
to the pan add about a 1/2-1 cup HARD apple cider (magners is good) 1 tbsp dijon mustard and cook down. add a bit of heavy cream a little at a time...tweak until you like the taste, return pork chops and simmer until just cooked through..
you can look her actual version of the recipe and not my vague bastardized version of it on Foodtv (it refuses to load on my computer for some reason..sorry about that)

get some apricot jam and 2 slices of good, whole grain bread... toast the bread and then put in food processor with 1 tsp of olive oil, salt & pepper- and pulse until a very coarse crumb...
Spoon 1 teaspoon of the apricot jam and then mush a small handfull of the bread mixture on top of the jam.
Cook at 350 for 20-25 minutes.

layer pork chops, sauerkraut and poor beer over top.
put in oven COVERED 350 for about 45 minutes.
Delish and super cheap and easy.
