Anyone have great vegetarian recipes for barley?
It's my latest favorite grain...any tried-and-true veggie-friendly recipes? TIA!

Stuffed peppers. I don't have the recipe with me, but basically all you do is substitute the beef with barley, add some crushed tomatoes, seasoning, corn, chopped peppers - really whatever you like. I also top mine with cheese (not sure if that is ok for a vegetarian or not). I'll try to post the exact recipe later or tomorrow if you'd like.
Also, my dad makes a great barley soup. He does put beef in it, but maybe you can substitute something else, or take out the beef altogether?
