Anyone Have Menus for week of 10/18 yet?

Mine looks awfully similar to last week's because I planned SOOO poorly - forgot some events I was involved in and just fell behind the 8 ball. Back in the saddle this week!Chat Icon

Sunday: Coq au vin w/ buttered noodles, baby spinach salad w/warm bacon vinaigrette dressing

Monday: Marinated Steak Garlic Asparagus, baked potatoes

Tuesday: Buffalo Chicken Sandwiches on stoneground wheat buns, homemade bleu cheese sauce, carrot and celery sticks

Wednesday: Angel Hair Pasta w/ chicken Sausage, House Salad, Garlic Breadsticks

Thursday: Turkey ghoulash with egg noodles, harvest salad (apple cider dressing)

Friday: Rob's favorite easy azz chicken rice soup.

Saturday; Dorney Park!

Mon.- Chicken with dumplings and egg noodles

Tues.- Rigatoni ala vodka, salad, garlic bread

Wed.- Dinner w/ the parents?

Thurs.- Roasted turkey breast, sweet potato casserole, sausage stuffing, cranberry sauce and gravy

Fri.- Baked stuffed shells with meat sauce

Sat.- Homemade turkey soup with tubettini and romano cheese

Sunday- chicken and rice in the crockpot, salad
Monday- Hobo packets- essentially hamburgers with no buns, potatoes and carrots, salad
Tuesday- DH at Yankee game so leftovers for me
Wednesday- Book club for me so leftovers for DH
Thursday- still unsure, maybe I'll still a recipe from here, I'd like to do a homemade soup if the weather stays like this
Friday- pizza
Saturday- we have a 30th birthday party to atttend

Weds: Meatloaf, buttermilk mashed potatoes, glazed carrots

Thurs: Buffalo chicken burgers, sweet potato waffle fries, steamed broccoli

Fri: Out

Sat: Honey glazed turkey tenderloin panini w/munster cheese, dijon mustard, romaine lettuce and tomatoes with veggie tomato soup

Sun: Football...lots of apps

Sunday: French onion soup and broccoli quiche

Monday: Pork loin with apples with potato pancakes

Tuesday: Steak, rice a roni and green beans

Wednesday: Pan seared scallops with zuchinni over rice

Thurs: Emeril's garlic-lemon chix thighs

Friday: Hamburgers and Hotdogs

Saturday: we go food shopping on Sat so this is when our menu starts over.

Sunday - whole roasted chicken, crash hot potatoes and salad

Monday - homemade chicken salad on whole wheat baguette, chips

Tuesday - Thursday - away on business

Friday - pizza

Saturday - I think slow cooker chicken teriyaki over brown rice?

Finally getting back into this b/c I'm tired of spending money!!!

Sun: pasta...nothing I want more right now!

Mon: Homemade pizza night

Tues: Tofu/chicken with veggies and rice and gyozas (trading joes)

Wed: Soup and salad night (a la Panera)

Thurs: Fish, veggies and rice

Fri: Eggplant and chicken parm (maybe as a meal, maybe as heroes)

Monday: Mini Meatloaf, cornbread, & brocolli

Tuesday: leftovers...momma's going out!

Wednesday: Pancakes & fruit salad

Thursday: ? Not sure yet...I want to try PW Beef Stew with Mushrooms and I would serve over egg noodles and creamed spinach ( I want to try to find a recipe for burnt brussel sprouts)

Sun: whole roasted chicken with roasted potatoes and carrots, sauteed spinach and steamed broccoli (had people over)

Wed: my son's first birthday. making one of his favorites...pizza with spinach and also sausage, salad

sunday - dh worked so i had dinner with my mom at houston's... cheeseburger and fries Chat Icon

monday - dh is working again so i'm having cream of chicken over rice with rotisserie chicken

tuesday - tacos and chips and salsa

wednesday - shrimp and pasta with garlic, oil, and old bay

thursday - shake and bake chicken with rice and broccoli

friday - swedish meatballs and egg noodles

saturday - dh is working again so i dunno probably something quick and easy

She makes it with Buttered Gnocchi but I hate buttered pasta of any kind Chat Icon


Ingredients:

* 1/4 cup extra-virgin olive oil (EVOO), 4 turns of the pan
* 1/3 pound thick-cut (1/4 inch) pancetta, cut into sticks
* 2 pounds skinless, boneless chicken breasts and thighs, cut into large chunks
* Salt and freshly ground pepper
* All-purpose flour, for dredging
* 1 large onion, thinly sliced
* 4 garlic cloves, crushed
* 14 to 16 dried Mission figs, quartered
* 1/3 bottle Rosso di Montalcino wine (eyeball it)
* 11/2 to 2 cups chicken broth
* 1/4 cup chopped flat-leaf parsley (a generous handful)
* Zest of 1 lemon
* 1 tablespoon chopped thyme
* One 12- to 16-ounce package fresh or frozen store-bought gnocchi
* 3 tablespoons unsalted butter
* 1/4 teaspoon freshly grated nutmeg (eyeball it)
* 2 to 3 tablespoons chopped chives (10 chives)


Directions:

1. Heat a large, deep skillet over medium-high heat. Add the EVOO, 4 turns of the pan, and the pancetta. Cook the pancetta for 3 to 4 minutes to brown and crisp it, then remove with a slotted spoon and reserve. Place a large pot of water on the stove to boil.

2. Meanwhile, season the chicken chunks with salt and pepper and dredge in a little flour. Reheat the skillet, add the chicken and brown over high heat for a few minutes on each side, then scoot the meat to the edges of the pan and add the onion, garlic and figs. Cook for 5 minutes, then mix the chicken chunks into the onion and figs. Add the wine to the pan and cook it down for 5 minutes or so, until about 1/3 cup remains. Add 11/2 cups of the chicken broth, the parsley, lemon zest and thyme, and stir to combine. Reduce the heat to a simmer and cook the chicken another 10 minutes, while you prepare the gnocchi.

3. Salt the boiling water and add the gnocchi; cook according to the package directions, then drain. Heat a medium nonstick skillet over medium-low heat. Melt the butter and cook until the butter is browned. Add the gnocchi to the browned butter. Raise the heat to medium-high and lightly brown the gnocchi. Season the gnocchi with salt, pepper and the nutmeg, turning the gnocchi to coat. Add the chives, toss the gnocchi and remove from the heat.

4. Taste the sauce and adjust the seasoning. If you would like a little more sauce, add the other 1/2 cup of broth to the pan. Mound the chicken and figs in shallow bowls and pile the gnocchi on top of the chicken in the center of the bowls. Garnish with the crisp pancetta sticks and serve.
