Appetizer/Cocktail Party for 2?
I wanted to do a dinner/date-night for DH of appetizers... The whole point is to be able to sample a little of a lot of things but I feel like it is hard to do this for only 2. I wanted to make a spinach dip with some bread for sure, but I know my husband wants protein. At first I was going to do some sort of meat in puff pastry or pillsbury dough of some sort but then that is bread upon bread. It would be a lot of carbs. I was also thinking mini-meatballs but we do meatballs a lot and I'm not sure that would go well with spinach dip. Any ideas?

You could do a cheese sampler plate with some different meats (soppresata, pepperoni, etc.). Include some olives, marinated veggies, etc.
You could do chicken skewers with dipping sauces.
A lot of appetizers have some sort of dough/bread -- pigs in blankets, empanadas, etc. But I wouldn't worry about it. If I am doing an appetizer night, I am probably carbing it up! And washing the carbs down with a ton of wine!
I think spinach dip is pretty neutral and goes with a lot of things, so if you went with mini meatballs, that would be fine, I think. You could always switch it up by doing a different sauce. I usually do the grape jelly/chili sauce with meatballs, but I just had a Mexican and margaritas Pampered Chef party, and I made a spicy chipotle sauce for the slow cooker mini meatballs. Also, you could do mini cocktail franks or sausages instead of the meatballs in some kind of sauce (instead of doing a pig in blanket thing with dough).
Or you could do a stuffed mushroom with sausage for a meat component with no bread/dough. I have a really good recipe.
What about a shrimp cocktail or marinated shrimp? I sometimes marinate cooked shrimp with fresh garlic, parsley, olive oil, and lemon juice, and salt/pepper. People love it (serve chilled).

Shrimp cocktail would be perfect and I always love a cheese platter with some jam or dried fruit and nuts. Potato skins are easy to do for two. You could do wings or chicken satay skewers or crescent dogs. Hummus and veggies would be a nice lighter option.

Here it is! I always make this for holidays and it's a crowd pleaser (people who say they don't like mushrooms wind up eating them, or at least devouring the filling). Leftovers reheat well.
3 hot (or sweet) Italian sausage links, casings removed 1.5 teaspoons dried oregano 1 cup grated parmesan cheese (about 3 ounces) 1/2 tsp. Worcestershire sauce 1/2 tsp garlic powder 1 8 oz package cream cheese, room temperature 1 large egg yolk
Olive oil 24 large (about 2 inch diameter) mushrooms, stemmed 1/3 cup dry white wine
Saute sausage and oregano in a large skilled over medium-high heat until sausage is cooked through and brown, breaking into small pieces as it cooks. Using a slotted spoon, transfer sausage mixture to large bowl and let it cool. Mix in 1/2 cup parmesan cheese, Worcestershire sauce, and garlic powder, then add in cream cheese. Season filling with salt and pepper to taste, then add in egg yolk.
Brush a 15 by 10 baking dish with olive oil to coat. Brush cavity of each mushroom cap with white wine; fill with a scant 1 tablespoon of filling, and sprinkle with remaining 1/2 cup of parmesan cheese. Arrange mushrooms in prepared baking dish, filling side up. (Can be made 1 day ahead. Cover and chill.)
Preheat oven to 350 degrees. Bake uncovered until mushrooms are tender and filling browns on top, about 25-30 minutes.
As an aside - I just unrolled a new Facebook business page - Christine Braun Real Estate. My DH and I used to do this all the time before kids. We would usually have shrimp cocktail, these relatively healthy stuffed artichokes and maybe a fruit/cheese plate.
Plus wine and a movie. :)
